Another brew day come and gone.  A pretty uneventful brew, save for the broken fridge we found when looking to get the fermentation going on the brew.  In two weeks, we'll probably be ready for bottling and we'll see how this highly-experimental beer turns out.

Imperial Brown Brew Day

Tomorrow, bright and early, we'll be brewing our Imperial Brown.  Currently we're aiming for gravity of 1.08 with 40 IBUs, however, with the longer boil time, we'll probably move up the hop additions in order to eek a few more IBUs out of the Golding and Willamette hops to get this closer to a true Imperial Brown rather than a standard American Brown.  This is our first 5 gallon batch in a while after experimenting with split batches our last two times through.  Should be interesting to see how the hot weather interacts with our brew.  I know it's a bit tougher to work in this weather, but it's the only day we have available.

After the Imperial Brown, we'll be heading back to refine our IPA recipe in another week.  Can't wait for that...

Arkh Wins!

We here at Arkh Brewing have taken it upon ourselves to enter as many competitions as possible as we have found that the feedback from having BJCP certified judges rate our beers has been invaluable.  We've also been extremely fortunate with our most recent entries.  The first competition we entered was the Hangar 24 Home Brew Competition in Redlands, CA.  We entered our American Pale, English Pale, and American Stout.  Our American Pale was in the category with the most participants and something happened in the bottle that produced off-flavors, so it's back to the drawing board there.  Our American Stout we knew would not win awards as it had not had proper time to carbonate.  But the notes we got back were positive on the flavors and they only docked us for carbonation.  Our English Pale, however, won second place in the category and we are extremely excited about that.

The second competition we entered was at the Orange County Fair.  We were out of our English Pale, so we entered our American Stout and our Sweet Stout.  We have not yet received notes back yet, but our American Stout did not place, however, our Sweet Stout won first place!  Both Scott and I (Blake) are extremely excited with this win and we hope to make a full 5-gallon batch in the future (right after our Imperial Brown).

American Stout Bottled

The American Stout (as of yet unnamed) has been bottled. It was a one
man show tonight unfortunately, but everything went smoothly. The
final gravity of the stout was 1.015 at 75 degrees farenheit. It is
pitch black and tastes good right now without carbonation. I'm really
looking forward to tasting it after it carbonates.

Today we removed the cherries from our Olde English style Cherry Ale. The process went pretty smoothly until we realized our second bucket does not have a lid. Luckily, all four of our 3 gallon fermenters were available, so we quickly transferred to that, added the Brettanomyces, and put in the fridge to ferment.

Brew Day a Quasi-Success

After our first mash of the morning decided it didn't want to sit at the right temperature (due to a mistake on our part - we didn't pre-heat the mash tun), we threw the grain away, started on our second planned brew of the day, and when the Bruery Provisions store opened up at noon, I was right there, ready to replenish our 2-row pale grains so brew #1 could be retried. So here we are 14.5 hours later, with everything done. Two beers fermenting in the fridge at 70 degrees, all equipment properly stored, and nothing left to do but wait. Pictures to follow...
